It comes from our Vermentino vineyard in Bolgheri.
Hand-picked in November in the presence of noble rot, Botrytis Cinerea, which grows on the bunches thanks to favorable climatic conditions in a well-defined area of the vineyard: fog in the morning and sun in the afternoon hours.
After the natural fermentation, it is aged 12 months in new French oak barrels.
Then it follows a long rest in the bottle.

Aroma: The odor is fresh, sweet and very pleasant, with citrus and loquat, in apparent surplus honey, candied fruits and barley candy, perfectly complemented by delicious muffled chimes.
Taste: Entry into the mouth is convincing in its tactile analysis, extraction is rightly dense and consistent.
Elegant, harmonious and round in the center of the mouth that presents a sweetness and a well-balanced and pleasing fruit, supported by a rightly combined fresh note.
It expands and proceeds pleasantly supported by a body of well-integrated fruit with muffled, voluptuous and sensual scents. It ends with a rich and clean mouth with sugar due to its acidity which leads it to be re-drunk again.
Service temperature: 14 °C
Pairings: blue and / or spicy cheeses - foie gras - crostini of livers - anchovies - desserts of all kinds.
How much remains in the cellar: it is assumed more than 15-20 years.

Built in 2000 the winery in small size makes use of cutting-edge technologies that together with the local traditions allow for maximum control and the good workmanship from harvest to bottling.
Inside the winery conical reservoirs are mainly used to support the work of fulling is done during the harvest.
The vats have all the control of the temperature independent from one another.
The barrel receives French oak barrels where strictly within sharpen their structure: Emilio Primo, Il Tarabuso and Marchesale.
