Franciacorta D.O.C.G. Brut Jerobam (3 lt)

From hand-picked Chardonnay and Pinot Noir grapes, Franciacorta Brut D.O.C.G. is an excellent wine for aperitif.

It is characterized by a persistent perlage, and intense straw yellow with golden reflections and delicate bouquet with vanilla notes.

Definitely a perfect choice for fish courses, shell-fish dishes or delicate main course.

ABV: 12.5%

Organic Sparkling Wine

Vine variety: cuvée of Chardonnay (80%) and of Pinot Noir (20%)

Implantation: guyot / spurred cordon

Yield: 100 qli /hectare

Harvest: by hand in boxes

Harvest period: August

Pressing: Pneumatic Press

Vinification: white

Decantation

Addition of selected yeasts and fermentation in stainless steel tanks.

The cuvée is made in spring. After the addition of sugar syrup and yeast for secondary fermentation, it is bottled and stacked on its side to aid re-fermentation and slow refinement.

Refinement

At least 24 months on the yeasts in steel tanks/oak barriques and minimum 3 months of post degorgement.

Remuage: gyropallet

Alcoholic content: 12.50%

Dosage: 7gr

Sensory analysis

Colour: Straw yellow, intense with golden reflections.

Perlage: fine and persistent.

Bouquet: simple, delicate with evident scents of yeast and a light note of vanilla.

Taste: caressing, full, captivating and persistent.

Bottle: Bottle Jerobam 3,0 Lt.

Storage: Stored horizontally, better in the dark, at a temperature of 10 - 12 °C and 60% of humidity.

Food pairing: Rich aperitif, perfectly combining fish courses, shell-fish and delicate main courses.
