Red wine with one color deep ruby red with garnet reflections.
The aroma is intense and complex bouquet with hints of overripe red fruits, cherries and sour cherries marmalade, dry figs; light notes of cinnamon and vanilla.
Full and soft palate, good balance between sweetness and acidity. Persistent aftertaste.
Excellent with aged sheep milk cheeses, roasted almonds, figs, chestnuts, biscuits.

Production Area: Salento, Puglia.
Vineyards: The Primitivo vines are old Apulian bush-vine of over 70 years old, located in one of the most fascinating areas of the Alto Salento, between Sava and Manduria, in the heart of the production area of Primitivo di Manduria.
The warmth of the sun and the proximity to the Ionian Sea are the most important factors for the production of Primitivo.
Vinification: Late hand-harvest (beginning of October) after grapes withering on the plant.
Destemming and crushing; maceration at controlled temperature for 10-12 days with regular pumping overs.
Draining off; malolactic fermentation and ageing in American and French oak barriques for about 6 months.
