Italian Red Wine from Veneto

Red wine with one color deep red with slight glints of violet.

In the aroma there are an intense- bouquet of Marasca cherries in alcohol with light hints of chocolate- and vanilla.

In the palate the flavour is soft and pleasant with a strong hint of fruit in alcohol.

This well-structured wine goes well with flavorsome pasta dishes, boiled meat, red meat and mature cheese.

Enjoy it at one temperature between 16 to 18 °C

ABV: 14% vol.

PRODUCTION TECHNIQUE:

Grapes harvested in vineyards in the Mezzane area are mashedand cold-macerated through spontaneous fermentation.

After devatting, the wine is stored in a steel tank until it is “repassed” over the pomace of Amarone of the same vintage.

This procedure starts at the end of January, when the wine is kept with Recioto pomace for a week.

It is subsequently aged 18 months in French oak barriques.

ALCOHOL CONTENT: 14% vol.

SERVING TEMPERATURE: 16 - 18 °C

The Grapes

Corvina – Rondinella are two grape varieties commonly blended together in Italy, most famously in Valpolicella wines.

Corvina plays the main role usually, with Rondinella as backup, creating a typically light-colored, medium-bodied wine with noticeable astringency on the palate.

The traditional Valpolicella Blend consists of three grape varieties: Corvina, Rondinella and Molinara. The first two are usually used in the highest proportion, as Molinara tends to be fairly nondescript and is prone to oxidization. Corvina, when used as the main variety, gives its famous sour-cherry character, as well as body and structure. Rondinella – a variety that became popular in the 1960s for its high yields – is best employed in smaller amounts for the fresh, herbal notes it imparts on Valpolicella wines.

The Corvina – Rondinella blend is also permitted in the Bardolino DOC, and under the region's less discerning IGT title. Also, Corvina and Rondinella's thick skins mean they can both be air-dried in the traditional appassimento style, making them suitable for use in the prestigious Amarone della Valpolicella wines.

Vineyard and cellar

The vineyard property, about 13 hectares, is located in the municipality of Mezzane at an altitude ranging from 250 meters to 450 meters above sea level It is cultivated in an environmentally and integrity, favoring the use of natural pesticides, such as copper and sulfur also all the processes related to the production carried out by hand.

The cellar is organized in a traditional way and the fermentation of the grapes on the skins in stainless steel tanks at controlled temperature aging of wine in barrels of 225 lt. in French oak.
